Dishy Delights: Easy Avocado Sandwiches Two Ways

A few weeks ago, our mom came home exclaiming, "I bought 10 avocados for 10 dollars!". We were pretty excited given our new-found love of all things avocado. But about 6 or 7 avocados and multiple bowls of guacamole and chips later, we decided we needed to change up our recipes! So we whipped up these two quick and easy sandwiches! 

Guacamole Grilled Cheese
This is a zesty take on the good ol' grilled cheese sandwich! This is perfect for a fun dinner with family and friends. Pair with loud music and laughs and you have a fiesta!! We whipped up some guacamole (our cheating version) and spread it inside the sandwich. It's such a flavorful sandwich! 

Ingredients: Bread (we always have some whole wheat or multigrain on hand), cheese slices, butter, 2 avocados, and salsa. 

1) 10 second guac!: Peel and mash the avocados (our mom's genius idea was to use a potato masher and we had the avocados mashed in a few seconds) and blend in your favorite salsa until it's spicy enough for you. THAT'S IT!  
***This is our go to when we have guests coming over and don't have much time. They won't be able to tell the difference! 

2) Spread butter on the bread slices (a thin layer on both sides)

3) Add cheese and a few spoonfuls of the guac. 

4) Heat on your grill (or however you make your grilled cheese. We use our trusty mini George Foreman  grill!) and enjoy!


Avocado, Spinach, and Cucumber Tea Sandwiches
This is a completely different option for your yummy sandwich. This twist on the traditional cucumber tea sandwich adds a few extra veggies for an additional texture and taste. This is perfect for an afternoon tea party for the girls. 

Ingredients: Bread, cream cheese, ranch dip mix, avocado, spinach, and cucumber 

1) Wash and cut your veggies into thing slices

2) Mix your spread: All you need is a few tablespoons of cream cheese, and then mix in about a teaspoon of the ranch mix. Blend thoroughly. 

3) Cut the crust of your bread (for a fancy touch) and spread the cream cheese on both slides. 

4) Add the veggies and cut into cute little quarters.    

Put on your favorite girly dress and sip some hot tea! :-)
