Today was a self-assigned snow day (if our local high school as a two-hour delay, we count that as one for us, too!), so we wanted to go full-on cozy with a Banana Nut Oatmeal Bake. It was delicious and gooey and added a warmth to our lazy breakfast, which we had looking out over the snow-- some quality AM infomercial watching may have been involved, too.

Bonus: While it was in the oven, it made our whole house smell like Banana bread, so, you know, if you like the scent of vanilla and cinnamon: it's free air freshener!
Ingredients:
1. 1 cup rolled oats
2. 1 tsp baking powder
3. 1 tsp cinnamon
4. 1/2 tsp vanilla extract
5. 1 egg, beaten lightly
6. 1 cup milk of choice
7. 1 ripe banana, mashed
What to do:
1. Preheat oven to 375 degrees Fahrenheit and grease a small baking pan.
2. In a medium-sized mixing bowl, combine the oats, baking powder and cinnamon (ingredients 1-3).
*If you like it extra sweet, add your sweetener of choice-- we used Stevia to keep it low-cal!
3. In a separate bowl, combine your wet ingredients (ingredients 4-7).
4. Pour your wet ingredients into your dry ones and mix well. The mixture should be a little liquid-y because the oats are going to cook in the milk itself as it bakes.
5. Pour the batter into your baking dish and put it in the oven. Cook for 45-60 minutes, or until the top is brown and crusty and a toothpick comes out clean!
