DIY Eats: Wheat-free Cranberry-Orange Scones + Cranberry-infused butter

Hello Darlings! We made our first fall flavor recipe today with one of our favorite ingredients: cranberries! With it sweet smell and tangy taste, it makes your dishes so flavorful as well as festive. We recently discovered a new flavor combination: cranberry and orange. We don't know what about this combo is so delicious, but trust us, it is. You'll just have to try for yourself! As you know, Darling Disposition loves tea! And nothing goes better with tea than scones. But these are not your ordinary buttermilk scones, they are completely grain free! Using a mixture of coconut and almond flours, you can get the perfect moist scone texture without the carbs.



We also whipped up a simple fresh cranberry infused butter. It's tart and sweet and perfect to top your favorite bread and toast. These also make adorable gifts! Spoon the butter into lidded jars and add a cute little ribbon. 

Featured ingredient: Ccoconut Flour. Coconut flour is a great gluten-free substitute to regular and whole wheat flour. It has a super high amount of fiber: 5 grams per tablespoon, and this fiber helps lower blood sugar. It also has more protein and healthy fat than regular flour; in 100 grams of coconut flour, there is 20 grams of protein. Whew! That sounded really good to us. But it is a really absorbent flour so you will have to increase the amount of egg that you are using and you will have to mix the flour with one or two others. When substituting coconut flour in, do NOT use a 1:1 ratio with wheat flour; for each cup of wheat flour, you will only need 1/4-1/3 cup of coconut flour. 

Ingredients 
Makes about 6-7 large scones

1. Almond flour (3/4 cup)

2. Coconut flour (1/4 cup) 

3. Baking Stevie (1/3 cup) 

4. Baking powder (2 teaspoons) 

5. Salt (1/4 teaspoon) 

6. Dried cranberries (1/3 cup) 

7. Greek yogurt (1/2 cup) 

8. Eggs, lightly beaten (4) 

9. Fresh squeezed orange juice (1/4 cup) 

10. Orange zest (2 Tablespoons) 

11. Coconut Oil (2 Tablespoons) 

12. Vanilla extract (1/2 teaspoons) 

Glaze: A 2:1 ratio of orange juice and powdered sugar/sweetener. Just mix it up! 

Steps

1. Preheat the oven to 350 degrees. 

2. Mix the dry ingredients (1-6) in a large bowl. 

3. Mix the wet ingredients vigorously (7-12). And then mix the wet into the dry. 

4. Drop by spoonfuls onto a parchment-lined baking sheet. 

5. Bake for 25-30 minutes. 

6. Allow the scones to cool and then dip into glaze. 

7. Enjoy with your favorite cup of tea! 

Cranberry-Orange Butter

Ingredients

1. Salted butter (1 stick) 

2. Fresh cranberries (1/4 cup) 

3. Orange zest (1/4 of an orange) 

4. Honey (2 Tablespoons, add more to taste)

Just one! Whip everything up in a food processor.
