DIY Eats: Healthy Chocolate Chip Cookies




It's Friday afternoon and we're planning a quiet sisters evening in!  So, we whipped up a batch of these health-ified chocolate chip cookies. They're made with only healthy ingredients that all clean eaters have in their kitchens and my, my, they taste just divine! With flavors that we all love, like chocolate and peanut butter, these oatmeal based cookie is just what any Friday night needs. The recipe is taken from the fabulous Watching What I Eat blog, and she says this is a breakfast cookie- so we say, GO FOR IT!




Ingredients:
1. 2 bananas (mashed)
2. 1/4 cup peanut butter
3. 2/3 cup (or one single serve cup) unsweetened applesauce 
4. 1 teaspoons vanilla
5. 2 tablespoons maple syrup

6. 1.5 cup old-fashioned oats
7. 1/4 cup chocolate chips (maybe a little...or double...extra) 
8. 1/4 cup coconut flakes 

Steps
1. Preheat your oven to 350 degrees
2. Mash banana until smooth
3. Add wet ingredients (2 through 5), mixing slowly
4. When combined, mix in dry ingredients (6 through 8). And mix again! 
5. Let dough sit for 10 minutes
6. Spoon on to lined/greased baking sheet and flatten 
6. Bake for 25-30 minutes, let cool and enjoy with a glass of milk, your favorite movie and your favorite sister! :-)
